Parmesan Baked Cobia
Try oven-baked cobia with a tangy Parmesan and basil coating – it’s ideal for a quick family meal that everyone will enjoy. Accompany with a green salad. Ready to serve in under 30 minutes.
Preheat oven to 180°C / 375°F.
Rinse Cobia portions and pat dry.
Mix remaining ingredients in a large bowl. Take each cobia portion, dredge in melted butter and then place in the cheesy breadcrumb mixture, press to ensure overall coverage.
Place the breaded fish on a well-oiled baking sheet. Bake for 20 minutes.

1 cup Parmesan cheese, finely grated
1 teaspoon garlic salt
½ teaspoon fresh basil, finely chopped
