Baked Honey Cilantro Lime Cobia Fillet

Preheat oven to 350 degrees. Cover and grease a large baking sheet with aluminum foil and place the Cobia fillet. Season with salt and pepper on both sides.
Place lime slices under the Cobia. Mix together the butter, lime juice, honey and garlic and pour this mixture over the cobia fillet, place more lime slices on top and fold the sides of the foil over the cobia.
Place in the oven for 15-20 minutes, then switch the oven to "broil" and cook the Cobia another 5 minutes under the broiler.
Serve sprinkled with chopped cilantro, and baked cherry tomatoes, if desired.
- 1 1/2 Ibs Cobia fillet
- 1/4 cup fresh cilantro, finely chopped.
- 1/4 cup Honey.
- 1/2 cup lime juice.
- 1 lemon, finely sliced.
- 3 garlic cloves, finely chopped.
- Salt and pepper.
