COBIA PASTOR TACOS - CHEF JOSE MENDIN
Ingredients
3ea 2oz pieces of cobia
2tbsp pastor marinade (see below)
½ grilled pineapple cut in ½ inch cubes
3tbsp chopped kimchee
3ea corn tortillas
2tbsp salsa arbol (see below)
Pastor Marinade
4ea chiles guajillos
1cup pineapple juice
1cup orange juice
1cup chopped pineapple
½ chopped onion
1tsp chopped oregano
1tbsp choppe garlic
2ea bay leaf
2ea clove

In a sauce pot all ingredients boil until reduce by half, then puree. This will be your marinade.
Arbol sauce
3ea plum tomatoes
3ea tomatillos
4ea garlic cloves
½ onion
3ea hydrated chile de arbol
½ cup cilantro leaf
Water & salt to taste

Grill the tomatoes, onions, tomatillos. In a blender add all ingredients including the hydrated chile de arbol. Add water and salt to taste.
For the Fish:
Marinade the fish for up to 24hrs. with pastor marinade. Grill the fish or sautee until cook to desired temperature. Serve in the tortillas top with chile de arbol sauce, kimchee and grilled pineapple.
