How to Make the Perfect Cobia Salad

Ingredients
- 2 lb. of Open Blue cobia
- ½ cup of olive oil
- ½ cup of lemon juice
- 4 cloves of garlic, minced
- Salt and pepper
- ½ cup of cilantro, chopped
- ½ cup of parsley, chopped
- ½ cup of red onion, diced
- ½ cup of cucumber, diced
- ½ cup of tomatoes, diced
Instructions
- Rinse the cobia fillets under cold water and pat them dry with a paper towel. Cut the fillets into small cubes and set them aside.
- Mix the olive oil, minced garlic, lemon juice, salt and pepper in a small bowl.
- Place the cubed cobia in a large bowl and pour the marinade over it. Mix well to make sure the fish is evenly coated. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
- Prepare the vegetables while the fish is marinating.
- Once the fish has finished marinating, add the vegetables to the bowl and toss.
- Garnish the cobia salad with fresh cilantro and parsley and serve chilled.
