1- Spicy Cobia With Mango Salsa
Ingredients:
- 1 pound of cobia fillets
- 1 cup mango salsa
- 1 tablespoon Cajun seasoning
- 1 teaspoon cumin powder
- 1 teaspoon curry powder
- 1 teaspoon roasted red chili paste
- Juice from 1 lime
- Olive oil
Instructions:
- Preheat the grill to medium-high heat (about 350°F).
- Mix Cajun seasoning with curry and cumin powder.
- Coat both sides of the cobia fillets with seasoning mix.
- Heat an iron skillet or heavy-duty oven-safe pan over high heat.
- When the pan or skillet is sizzling hot, add olive oil to it, then add the fillets and sear them for 2 minutes each side.
- Remove the skillet or pan from the heat to remove the fillets from the pan.
- Slice the fillets diagonally into 1 1/4-inch pieces.
- Return the pan to the heat and add the cobia slices back to the skillet, on their sides.
- Sear the fillets for 2 minutes, then flip them and place the pan in the hot oven for another 2-4 minutes or until fish is barely opaque in the center; you can check this by cutting into it with a sharp knife.
- Fan the fillets over the mango salsa on the plates.
- Pour off any excess oil from the pan and add roasted chili paste, olive oil, and lime juice, and then stir until boiling and well mixed.
- To serve, drizzle the lime and chili dressing over top of the cobia and enjoy!
2- Baked Cobia With Lemon and Garlic
Ingredients:
- 4 cobia fillets (about 6 ounces each)
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, combine the garlic, lemon juice, olive oil, oregano, salt, and pepper.
- Place the cobia fillets in a baking dish and brush them with the lemon and garlic mixture.
- Bake the cobia for 10-12 minutes or until it is tender and flakes easily with a fork.
- Serve the cobia with a side of vegetables or a salad.
3- Cobia and Vegetable Packets
Ingredients:
- 4 cobia fillets (about 6 ounces each)
- 2 bell peppers, diced
- 1 small onion, diced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 sprigs of fresh thyme or rosemary
Instructions:
- Preheat your grill to medium-high heat.
- Cut four pieces of aluminum foil, each about 12 inches long.
- Divide the cobia fillets, bell peppers, onion, and cherry tomatoes among the pieces of foil.
- Drizzle the vegetables with olive oil and season with salt and pepper.
- Top each packet with a sprig of thyme or rosemary.
- Fold the foil over the ingredients to create packets, sealing the edges tightly.
- Grill the packets for 10-12 minutes or until the cobia is cooked and the vegetables are tender.
- Carefully open the packets and serve the cobia and vegetables hot.
4- Cobia Cakes With Remoulade Sauce
Ingredients:
- 1 pound cobia fillets, finely chopped
- 1 egg, beaten
- 1/2 cup bread crumbs
- 1/4 cup diced red bell pepper
- 1/4 cup diced red onion
- 1 tablespoon chopped fresh parsley
- 1 teaspoon Old Bay seasoning
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
- 1 garlic clove, minced
Instructions:
- In a medium bowl, combine the cobia, egg, breadcrumbs, bell pepper, onion, parsley, Old Bay seasoning, salt, and pepper.
- Form the mixture into 4-6 cakes.
- Heat the olive oil in a large skillet over medium heat.
- Add the cobia cakes and cook for 3-4 minutes per side or until golden brown.
- Whisk together the mayonnaise, mustard, lemon juice, parsley, and garlic in a small bowl to make the remoulade sauce.
- Serve the cobia cakes with the remoulade sauce on the side.
