Crack an egg into the mixture, then add your beer until it has a pudding-like consistency. After you gently drag your cobia fish through the batter, lay it in a hot skillet coated with vegetable oil (at about 300 degrees). Allow it to fry for about two minutes on each side.

Make your chipotle sauce by combining sour cream and the sauce from a can of pickled chipotle peppers. You can use the actual peppers, but break them down in a blender so that they’re smooth when you add them to the sour cream. Add salt, garlic powder, and a little chipotle sauce to taste.
