Parmesan Crusted Baked Cobia


Step 1: Preheat the oven to 400oF (200°C). Line a baking sheet with parchment paper or foil.

Step 2: In a shallow plate, mix the parmesan, garlic, paprika, parsley, salt, and pepper.

Step 3: Arrange the Cobia fillet on the center of the baking sheet and place trimmed asparagus around the Cobia.

Step 4: Drizzle the Cobia filet with olive oil, then sprinkle the cheese mixture over the Cobia, pressing it in lightly with your fingers.

Step 5: Season asparagus with salt, pepper, any leftover cheese mixture.

Step 6: Bake until the Cobia is opaque in the thickest part, about 15 minutes. You can crisp up the parmesan crust for 1 minute under the broiler if you like.

Step 7: Serve the baked Cobia with lemon slices optional.



  • 14 oz Cobia Fillet
  • 1 or 2 bunch asparagus
  • 3/4 cup freshly grated parmesan cheese
  • 2 teaspoons paprika
  • 1⁄4 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 3 garlic cloves, minced
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon chopped fresh parsley, for serving
