Grilled Cobia With Mango Salsa

Simple and quick to prepare. This Cobia is lightly marinated and grilled. Serve with a fresh green salad dressed with a lemon vinaigrette and a fresh mango salsa.

STEP 1 Start by mixing all ingredients for the marinade together. Whisk until blended.

STEP 2 Pour over fish. Leave to marinate for 10 minutes.

STEP 3 Preheat grill. Cook fish over a hot grill for around 6-7 minutes each side or until the fish easily flakes.

STEP 4 For the mango salsa, dice the mango, red pepper, green onion and jalapeno pepper. Chop the fresh cilantro. Mix all salsa ingredients together and leave to stand for 15-30 minutes.

STEP 5 Serve with a green salad and a generous spoonful of the mango salsa.



1lb (400g) Open Blue Cobia portions (skinless)

        ¼ Cup Olive oil
        ¼ Cup Lemon juice
        1 teaspoon dry mustard powder
        1 clove garlic, finely chopped
        ½ teaspoon salt
        ¼ teaspoon pepper

Mango Salsa:
        1 mango
        ¼ Red Pepper
        2 tablespoons Fresh Cilantro
        1 Green onion, finely chopped
        1 Jalapeno, finely chopped
        2 tablespoons Lime juice
