Cuban Cobia


Step 1: Add the olive oil, lime juice, orange juice, garlic, green onions, paprika, cumin, salt and pepper to a blender. Blend until chunky smooth.

Step 2: Place the Cobia in a baking dish, pour the marinade over the Cobia.

Step 3: Allow the Cobia to sit in the marinade while you prepare the rest of the meal, at least 15 minutes. Do not let the Cobia sit longer than four hours in the marinade.

Step 4: Heat a grill pan or cast iron skillet over medium high heat (may also use an outdoor grill).

Step 5: Once hot, add the Cobia and sear for 3-4 minutes, brushing the Cobia with the marinade as it cooks. Flip and cook until your desired doneness.



  • 4 5oz Cobia fillets
  • 1⁄4 cup olive oil
  • Juice of 1 lime
  • 1⁄4 cup freshly squeezed orange juice
  • 3 cloves garlic
  • 2 green onions
  • 1⁄4 teaspoon paprika and cumin
  • 1 teaspoon salt + pepper
