Crunchy Cobia Nuggets
These crispy cobia nuggets are perfect served with vegetables and they make a fun meal for kids! Mixing things up? Try using them for a crunchy fish taco.
Sprinkle the flour into a shallow dish. Season with salt and pepper.
Pour the beaten egg into another dish.
First dredge the cobia in the seasoned flour. Next dip into the beaten egg mixture and then lightly coat the cobia with breadcrumbs.
Heat the oil in a large frying pan. Fry on a high heat for 7-8 mins until coating is golden in color. Remove and drain on kitchen towel.
Garnish with lemon wedges and lighted steamed green vegetables and either tartar sauce or a garlic aioli for dipping.
