Creamy Mustard-Dill Cobia
Instructions
Step 1: Season the Cobia generously with salt and pepper.
Step 2: Add 1 tablespoon olive oil over medium-high and sear Cobia for 4 minutes. Flip and sear for 2.5 more minutes. Remove from the pan, set on a plate.
Step 3: Add to the same cast iron pan: 1 tablespoon olive oil, 1 medium chopped onion and 2 chopped garlic cloves. Sauté for 3 minutes, then add 1.5 cups light coconut milk, 1.5 cups fish broth, 2 tablespoon lemon juice, 1⁄4 cup mustard (half Dijon and half yellow), 1 tablespoon fresh chopped dill, 2 teaspoon honey, 1 teaspoon capers, 1⁄2 teaspoon salt, 1/8 teaspoon paprika. Allow to cook down for about 10 minutes.
Step 4: Add the 3 cups of fresh spinach and the Cobia and simmer for 5 minutes.
