- In a pan at medium low heat add the Olive oil.
- Cook the chopped garlic and brunoise onions until golden brown.
- Add the aji panca paste then the Open blue cobia burger and mix it very well.
- Seasoned with oregano, cayenne pepper, oregano, cumin, salt and smoked paprika
- Mixed everything together and raise it to high heat.
- Add the 2 egg and cook it until medium texture, not to dry and save.
To plate
- Toast the brioche with a little of butter
- Filled the brioche with the chorizo and egg preparation.
- Sliced the avocado and put it on top.
