Cobia Tartare with Crisp Apple
Serve this dish for a special occasion appetizer, the mild, slightly sweet flavor cubes of raw cobia fillet is balanced by tangy apple and shallot.
Step 1 Take the skin off the Cobia (if required) and slice the fish into small cubes (about 2mm diameter).
Step 2 Mix the cubes of apple and shallots with the Cobia cubes.
Step 3 Add the cream to the tartar, the season with salt and pepper.
Step 4 Serve on a plate with some fresh salad on top.

½ Apple, finely cubed
½ Shallot, finely chopped
3 teaspoons Cream
Salt and pepper, to taste
