Fire & Ice Ceviche

Asian pear granita:
- 15 asian pears peeled and cored
- 2oz grated ginger
- 1Qt  water
- 1Cup simple syrup
- 4oz white soy
- 4Cup sour orange juice

place all ingredients in the blender then freeze and crush before serving

Ceviche Ingredients:
- 3oz thinly sliced Cobia
- sea salt 
- 1/2 teaspoon thinly cut chives
- 1/2 teaspoon small diced jalapeño
- 1/4 shaved red onion 
- 1oz lime juice
- 1oz sour orange juice
- 1/2 teaspoon shaved cilantro

Steps

  1. place all ceviche ingredients in a bowl and let marinate for 3-5 min.
  2. place crushed Asian pear granita on a cold plate, place ceviche on top discarding the juices.
