Ingredients

1 250-g slice of Cobia fillet in the thick portion of the fillet
1 ripe mango
1 cucumber
A few grilled sesame seeds
4 mustard cress leaves

Preparation

Asian pear granita:
- 15 asian pears peeled and cored
- 2oz grated ginger
- 1Qt  water
- 1Cup simple syrup
- 4oz white soy
- 4Cup sour orange juice

place all ingredients in the blender then freeze and crush before serving
